Blooming cake by Sylvia Toth

Description

This was a lot of fun! I made a two layer 12 x 18 chocolate cake with raspberry buttercream filling, chocolate frosting, and marshmallow fondant. The whole process took about 15 hours over the course of three days.

I cooked down raspberries and sieved out the pips and pulp, so I could just mix the juice into the buttercream. In a different batch of buttercream, I melted dark chocolate and mixed it in. Each layer was a bit too large for my cake leveler, so I ended up cutting them in half lengthwise to level, then fitting them back together. (no one noticed)

The flowers and birds are all fondant. I painted the deer using black food gel mixed with a little vodka. (the vodka evaporates and leaves the gel behind)

I brought the cake for a friend's birthday party at a Thai restaurant. Everyone loved it, and I ended up leaving a lot of it for the waiters and dishwashers. It was really delicious, although I'm not a huge fan of the taste of the fondant.

I would definitely do again.
