Description

The whole cake would up taking 4 days to make. It was a mexican chocolate cake with vanilla frosting, covered in home-made fondant & decorated with chocolate frosting. Also surrounded by a lake of tempered chocolate.

Day 1 - made the cake & cut it to size. I made a template of the design on parchment paper & used that to cut the cake to the proper size.

Day 2 - Made the fondant, iced the cake & covered it in fondant. Making fondant is a much more satisfying process than I would have imagined. Mainly b/c it turned out GREAT!

Day 3 - Tempered the chocolate (sorta) & made a 'lake' around the outside of the cake to make the dark background. I was also trying to make chocolate pieces that I was going to lay on top for the design, but I don't think I tempered the chocolate well enough. it just never set properly enough to make that work. But did lay a lot of chocolate out on stencilled parchment paper.

Day 4 - Frustrated by the chocolate method not working I went with the frosting decoration. piped the frosting on top & made the letters out of the remaining fondant.

Day 5 - Served to very happy co-workers. No-one seemed to care or notice that the cake was several days old. Seems that the fondant & refrigerator had preserved things well. The cake went in a matter of minutes and there was much happiness & sugar highs all round.
