Notes from Monet cake by Lynn Coffey

Description

I love to bake cupcakes and always need a new excuse, so I spent hours pouring through Threadless designs to find one that was cupcake-adaptable, and then I decided to excuse them by bringing them to a friend's birthday! After a lot of pondering (and lusting after tshirts) I settled on "Notes from Monet" for two reasons. One, I'm also an artist, and abstract art is one of my favorite aesthetics. This design reminded me of some of my paintings and sculptures. Second, it was the one design that was going to be more challenging than cutting cutesy shapes out of fondant. At first, I had NO IDEA how on earth I was going to make squares of watercolor. I totally made it up as I went along.

I began by making the watercolor squares and settled on making them out out of what is basically white chocolate candy melts. They come in an array of colors, and turned out to be perfect for this project. I melted them in the microwave, and essentially spackled them across the back of a pan covered with wax paper. I mixed and threaded the colors through each other, achieving a rather awesome watercolor look. I then popped them in the freezer for a minute, and then cut them into squares at just the right size. I then froze all the squares overnight so that they would stay solid.

The next morning, I decided on my favorite vanilla cupcake recipe, since I thought the simple cupcake would best accompany the sweetness of the white chocolate squares. I kept my buttercream vanilla as well, something I don't usually do, since I like a mix of flavors, but I wanted my color palette to remain plain to offset the colorful Monet squares.

White fluted cupcake wrappers and a star-tip swirled dollop of buttercream offset the harsh edges of the squares made the whole thing came together beautifully! I carefully placed the squares on the tops of the cupcakes, and off to the birthday party they went!

Everyone absolutely loved them, and the vanilla and white chocolate flavors came together really fantastically! The birthday girl proclaimed them the best birthday cupcakes ever :)
