When I saw the t-shirt design for Mr Salad it spoke to me. It said: "I may look like lettuce but I'm really cake!". As a base I picked a David Lebovitz recipe for zucchini cake because I wanted something appropriately veggie. And the good thing about zucchini cake is that it's both moist and dense which makes it great for staying fresh while you decorate. I did a crumb coat of lemon buttercream dyed green and then covered it with ruffled modeling chocolate to mimic the lettuce. Took me three shades of gel food coloring to get something close to the right green. I used modeling chocolate for the glasses too. I like working with modeling chocolate because it has a lot of body and it tastes better to me than fondant. Start to finish was about four days but it could have been done faster if I had worked at it a bit more steadily. I'm really pleased with how Mr Salad turned out and so were my neighbors who helped me do the honors and chow down a couple of slices.
