Description
When I saw the Mr Tee design, I knew I had to attempt to recreate it with fondant. I usually use modeling chocolate on my cakes so this was a new experience for me. The expression on my final cake is a little less "I pity the fool" and a little more "What kind of fool am I?" but other than that, I think it turned out well.
I used the Chocolate Buttercake recipe from The Cake Bible and while delicious, it didn't have quite the structural qualities you want for sculpting. I had to piece together some broken layers to make the big block for his head. And then when I tried to find my inner Michaelangelo, I discovered that while carving I had neglected to account for things like his hair and his ears. I ended up making cake ball dough from the cutoff pieces mixed with some extra icing and molded those features separately.
The icing is American buttercream flavored with vanilla and cherry because when researching Mr Tee's favorite dessert, I found a reference to one of his birthday dinners where he had a chocolate crepe with roasted cherries. In my cake homage I used Extra Brut cocoa because hey, it seemed appropriate.
