Decay

Description
For this cake I wanted to try a new technique, sculping with buttercream. I needed a cake for my youngest son's 30th birthday, so I looked and looked through all the available designs. Finally found this "Decay" and it seemed so fitting, his other half sent him fishing with his daughter so she could get everything ready.
Day 1:AM: baked a 1/2 sheet cake and 2 7" oval cakes. Made double batch of buttercream. Split and made 1/2 chocolate.
Day 1:PM: Iced 1/2 sheet and carved ovals to the shape of a catfish head, and also created a platform for the bone to sit on. Iced catfish and placed in freezer (I read somewhere that the cake needed to be frozen to be able to sculpt the buttercream - NOT! would have been better without freezing).
Day 2:AM: Removed catfish cake from freezer and started adding buttercream in layers to give definition. Cake started sweating and became VERY wet. Put cake back in freezer for about 10 minutes to re-harden. Removed from freezer and started adding buttercream and sculpting again, got very wet again, used paper towels to dry and continued adding buttercrea and sculpting. Cake continued to sweat but I was able to work through that. Once I was happy with the sculpting I placed the cake in front of a fan for about an hour to dry. Note to self: DO NOT freeze the cake to sculpt with buttercream.
Once the catfish head was dry I was able to airbrush and complete the cake. Everyone at the party thought the catfish was very realistic, no one wanted to eat the head! Sheet cake was chocolate with chocolate buttercream, the fish was red velvet with vanilla buttercream, those eating cake all enjoyed!
