Description
This cake was made over a week. I made a vegetarian cake recipe that I had wanted to try because instead of using margarine for the fat, it utilised avocado. The icing likewise had avocado in it instead of a processed fat.
The sea creatures were made first. I drew templates on paper and cut them out of coloured fondant. When they had dried, I drew the faces on with coloured royal icing. I baked the cake a few days later and made the icing the following weekend. Finally I made the avocado icing and and popped the dried fondant sea creatures on.
The end result was good. The cake was moist, considering that it used no eggs or butter. Most of my co-workers liked it. Some were put off by the green icing, calling it the "spinach" cake. I would add more cocoa in future to make it more chocolatey and reduce the amount of sugar in the icing to make it less sweet. Overall, a good cake and a fun project!
