Description
I chose this design for the bright colours and the quirky symbols, but also to poke fun at myself. I tend to overly focus on the negative rather than the positive and have struggled to consciously maintain a more positive outlook on life.
The cupcakes were made over a week. First I cut out the "fruits" from coloured fondant and then outlined and drew the designs on them with with white royal icing. The cake batter was a vegan chocolate avocado cake recipe that I was interested in trying. After baking and cooling the cupcakes, I topped it with avocado frosting that I made and laid the dried "fruits" on top.
The cakes were enjoyed by my husband's vegetarian co-workers the next day. I found the cupcakes quite moist and would make this recipe again, adding more cocoa for a deeper flavour and less sugar to reduce sweetness.
